Thousands of pounds of fish go through the biggest fish factory in Patreksfjörður every day. Located 20 meters from the harbor, fish is caught in the cold arctic waters and spends only seconds moving from the boat to the cold factory for processing.
I was amazed to see the machinery in this facility. So much of the process is automated, and there are a team of experts doing quality control on every fillet that passes through. We were given a behind-the-scenes tour with one of the 15+ year experienced operations managers. She walked us through the entire process from beginning to end.
Something I had never even knew existed was a million-dollar machine that uses lasers to pinpoint the bones in each fillet, and sends the measurements to high-powered water jets that shoot the bones out of each fillet.... all in just seconds.
